Breakfast “Cereal”

 Sometimes I miss a crunchy breakfast cereal to add to my bowl of fruit in the morning. In an effort to do something about this situation, I randomly mixed anything paleo-approved in a small tupperware box and called it a day. For some time at least. This is what it looked like:

My mix included almond slivers, walnuts, dried cranberries. sunflower seeds, finely chopped coconut flakes and I think chopped hazelnuts.

As you can see, this was a far away solution from the granola you can purchase at the store.
Early last week, I therefore tried to change things up a bit.

Up first, I separated the cranberries from the mix, added another cup or two of the same berries and shredded the whole portion with a tablespoon of water.

Then I added the rest of my previous “granola mix” plus some additional of each ingredient.

Since I didn´t want my granola turning moldy in its container, I heated the oven to about 150C (300F), spread my granola on a lined cookie sheet and put the whole thing to bake for about an hour (stirring every so often to avoid the burning).

Once done, I removed the cookie sheet from the oven, poured the whole batch into a container, added cinnamon, a little bit of honey and some unsweetened cocoa, and mixed everything very well.

I am pretty sure, that this can´t be stored very long (maybe 2 weeks?), but making a batch every once in a while isn´t too much of a hazzle and the granola really does replace grainy granola.

So far, I have enjoyed this plain and with fruit. I hope you´ll enjoy it as well.
