Paleo-Crepe

 Last week has been pur torture for me – tastewise at least. Mainly because in Germany labor day is celebrated on May 1st, with people making bíg tours walking or riding their bikes, playing music, having BBQs and drinking quite a bit of beer and other alcoholic beverages all day long.

And I must admit, that I like beer especially on warm days, such as we had on May 1st. It´s kind of tough to say “no” to everyone offering you some.

May 1st went right into our small town festival (Gösselkirmes) with a parade, rides, beer huts, lots and lots of food and live bands.

For 4 days, you can smell all kind of goodies (such as crepes, brats, cake, fries, caramelized almonds and much more). Until last year, this wouldn´t have been a problem. This year however the crepe-stands were calling my name loudly.

I was able to resist purchasing a crepe (even though the story was different with the ice-cream cup I had on Saturday) but  I just had to find a way to make a paleo-version at home. So on Friday night, I went on the lookout for different paleo-crepe recipes and ended up combining 2 different ones.

Paleo-Crepes

Ingredients:
- 4 eggs
-2 cups coconut milk
- 3 – 4 tbsp  coconut flour
- 2 tbsp honey
- 2 tbsp rum

Here is what you do:
- Mix eggs, coconut milk, honey and rum

- very slowly add coconut flour mixing constantly (to avoid clumps in the dough); the dough will be relatively runny

- add 2 Tbsp of dough to a greased skillet and let crepe bake on each side for a about a minute and a half until golden

- repeat last step until you have about 6 to 8 thin crepes
- enjoy with fruit, honey, nuts, cinnamon, dark chocolate, ham and cheese, pureed fruit jam, …

And just because our parade was very nice this year (even though the weather was the complete opposite), I will share a few more pictures of the very creative cars that were part of it. This year´s theme was princesses and princes. Every kindergarden class gets to sit on a different car, and school classes walk behind. In between there are bands, and alltogether the parade is just too cute to watch.
