Baked Avocado Halves with Egg and Bacon

 Well, my pinterest addiction is extensive (I could spend hours on there looking for new recipes, creative projects and toddler activities), and therefore my stumbling upon great-looking recipes occurs rather often. Thanks to pinterest, I also found this recipe for Baked Avocado Halves with Egg and Bacon.

Yesterday night, I had to try it out and my Avocados turned out pretty good.

Baked Avocado Halves with Egg and Bacon

Ingredients:

- 1 Avocado
- 2 small eggs
- Bacon bits (from about 2 slices of bacon)
- Salt, Pepper, Paprika Spice

Here is what you do:

- Preheat oven to 325F
- Halve Avocado and remove pit; place halves in a pan or on a baking sheet; make sure that they can´t fall to their sides
- Remove some of the avocado flesh, as there won´t be enough space to fit an entire egg otherwise (you can add the scraped of avocado pieces to a side salad or make a breakfast smoothie out of them)
- Very slightly season avocado flesh with salt and pepper
- Crack an egg into each avocado halve (careful, this might become a runny situation)
- Add more seasoning to the egg
- Bake in the oven for about 10 to 15 minutes until eggs are done
- In the meantime fry bacon bits to add to avocado halves once those are done.
- Enjoy with a side salad (mine was lettuce, smoked salmon slices, tomatos, and the avocado scraps with salt, pepper, white vinegar and olive oil)

(As you can see, the left egg could have stayed in the oven for a few more minutes but we were all starving).

Variations:
- Remove avocado flesh, cut into cubes and put back into avocado halves; then crack egg on top
- Add cheese (for those who are not eating paleo)
- Add tomatos
