Chocolate Coconut Truffles (Paleo Style)

As promised on Saturday, I have found a nice recipe for chocolate truffles, which I then adapted to make it paleo-conform.

I found the original recipe here. For my own version, I left out the powdered sugar, upped the honey a little bit, added grated chocolate to the filling and used dark instead of milk chocolate.

Chocolate Coconut Truffles

Ingredients (for about 12 truffles):
- 1/4 cup raw almonds (to garnish)
- 4 Tbsp.Honey
- 1- 2 Tbsps softened butter
- 2 cups shredded coconut
- 1/2 cup grated chocolate
- 1/1/2 cups dark chocolate

Here is what you do:

1. Mix honey with softenend butter.

2. Add coconut flakes.

3. Mix.

4. Add grated chocolate bits and mix again. The filling will be a little bit crumbly but one should be able to form it into little balls.

5. Using your hands, form little balls out of the coconut mix.

6. Melt chocolate and cover truffles one by one. Put them on a plate with parchment paper (I didn´t do that and later had problems getting the truffles from the plate, so better follow this instruction ... :-) ...).

7. Garnish with almonds or sprinkle with grated hazelnuts. Let cool in the refrigerator for about half an hour until the chocolate is completely hardened again.

8. Enjoy!

I had them with grapes and the combination was awesome. For variations, I could imagine forming the coconut filling around a hazelnut (as found in many store bought truffles).
