Simple Avocado and Egg Salad

 I have another recipe to share with you today. And no, for once it´s not a dessert. Today I have a side dish quick to prepare and very tasteful.

Simple Avocado and Egg Salad

Ingredients:
- 3 eggs
- 1 avocado
- lemon juice
- 1 – 2 cups mayonnaise or full-fat joghurt
- 1/2 cup mustard
- salt, pepper, parsley flakes

Here is what you do:

1. Boil eggs for 8 to 10 minutes

2. In the mean time slice avocado, remove pit and skin, and cut into bite-sized pieces. Add salt, pepper, lemon juice and parsley.

3. In a cup mix mustard with joghurt/mayonnaise.

4. Once eggs are done, peel off skin and also cut into very small pieces. Add eggs to avocados.

5. Mix everything well and add dressing. Reseason if necessary.

6. Serve as a side and enjoy. We had it with green salad and a sad remainder of chicken that was leftover from a previous meal.
