Paleo-ish Pumpkin Soup

Today I tried my hands at a creamy pumpkin soup and it turned out great, so I am sharing the recipe with you:

Ingredients (for 2 to 3 servings):

- 1/1/2 cans of pumpkin (cut into bite-sized pieces)
- 2 shallots (or 1 large onion)
- 1 garlic clove
- 1 orange bell pepper
- 2 Tbsp Butter/Coconut Oil
- 3- 4 slices of bacon (try to find some that isn´t processed with a whole bunch of c**p)
- 1 – 2 cups of chicken or vegetable broth
- 1/2 can of coconut milk
- 2 ounces of sour cream
- 1 – 2 Tbsp. of Wine Vinegar
- 1 – 2 Tbsp of Honey
- Salt, Pepper, Paprika Spice
- Chives, Parsley and Basil

Here is what I did:

1. I cut my shallots, bacon and bell pepper into very small pieces. Then I heated about 2 Tbsps. of Butter in a medium sized pot. I then sauteed shallots and bacon and a couple of minutes later the peppers (all for about 5 – 10 minutes).

2. Then I added the pumpkins, broth, vinegar and honey and let that heat up for another couple of minutes.

3. Then it was time to puree everything until smooth.

5. Once done, I added coconut milk and cream to start changing the consistency of the soup (you don´t want it to be to thick or too liquid).

6. While all this was getting to a slow boil (stirring regularly), I started cutting up my fresh herbs (Chives, Parsley and Basil) and added those to the soup along with salt, fresh pepper and paprika spice.

7. After mixing those in, I continued the soup on a slow boil for a little longer and enjoyed it for dinner.

Variations:
I didn´t have any carrots unfortunately, but think that those would taste great in the soup. You could also try adding a sweet touch but including and apple or a little bit of pineapple. Finally, some kind of sausage, ground beef or other meat on the side would be awesome as well.

Either way, pumpkin soup tastes great and you should try it out if you haven´t yet.

By the way, this soup takes about 30 minutes to make.
