Paleo-Style Avocado Smoothie

On a quest to find some better alternative than fruit with yoghurt for breakfast, I decided on avocado smoothies. I have loved the smooth taste of avocado smoothies for a long time, and they are just deliscious.

Usually, ny recipe would have included a half of an avocado, milk, sugar and a little bit of water to obtain a dinkable consistency.

Since I had to avoid the milk, I decided to use coconut milk and the juice of one lemon instead. The results tasted obvously a little more coconutty but very refreshing thanks to the lemon juice.

Ingredients:
  • 1/2 Avocado
  • 1 Banana
  • Juice of 1 Lemon
  • 1 small Tsp. Honey
  • 1 Can of Coconut Milk
  • About 1 ounce of Water
Instructions:
  1. In a mixer, combine avocado (without the husk), banana, honey and coconut milk.
  2. Mix for about 2 minutes until smooth.
  3. Now add lemon juice and water.
  4. Mix again.
  5. Avocado creates a very smooth yet thick consisetency. So be careful with the water. It should be just enough to make a smoothie with  a creamy but drinkable consistency, but not too much leaving the smoothie with a watery taste.
Enjoy this for breakfast or as a snack.
