Paleo Challenge Day 15 and Pancake Experiments

Today is half-time of my challenge. I am now 15 days on Paleo-Foods and it´ll probably get easier as more days go by.

Here is what I ate today:

Breakfast
Scrambled Eggs with Scallions, Onion and Tomato; 2 slices of Smoked Ham

Lunch
Leftover Chicken; Baby Carrots, Red Beets and Onions

Snack
Cantaloupe-Banana-Smoothie with Coconut Milk

Paleo Pancakes (based on Bananas) with Apple Slices

Pancake Experiments:
Today, I decided to try out one of the pancake recipes based on bananas.

Here is the recipe as I found it somewhere on the internet:
1 Banana
1 Egg
1 Tbsp Almond Butter
(makes 1 Pancake)

Here is my adapted version:
2 Bananas
3 Eggs
6 Tbsp (heaped) Ground Almonds (I didn´t have Almond Butter on hand)
1 Tbsp Honey (optional)
(makes about 10 – 12 Mini Pancakes)

Here is how I made my pancakes:
1. Mash bananas, add ground almonds, add eggs. Stir until you get your pancake dough.

2. Add dough for a trial-pancake to a hot skillet.

3. Try turning it over and watch as it disassembles into bite-sized pieces.
(Very practical, since my son´s portions have to be cut small anyway)

4. Decide to make smaller pancakes for easier turnover.

5. Repeat until your done with the dough. Try not to burn them too dark.

6. Enjoy with fresh fruit.

Tips:
- Make small pancakes so turning them over will be easier
- Pancakes will be less stable so chances that they´ll fall apart on you are still big (I had one fall apart for every 2 that turned out well)
