Paleo Challenge Day 16

Today´s menu was kind of weird for most of the day, because I didn´t have too much food in the house. In the late afternoon I therefore took my son to the store to get us some veggies and fruit to last until the weekend and to supplement the few fresh items I still had.

I got Bok Choy, Champignons, Tomatos and Mushrooms. For fruits I purchased a Mango and a Cantaloupe.

I also found seeds to grow your own veggies and got a few different ones (Lettuce, Peppers, Reddishes and Carrots). Over the weekend I will look for the right type of containers to start my first veggie garden. I have played with this idea since last fall, and turning paleo gives me one more reason to just go ahead and try this on my own.

Here is today´s weird menu:

Breakfast
4 Paleo-Banana-Pancakes

Lunch
1/2 Chicken with Tomatosauce 

Snack
2 large Carrots

Dinner
Broccoli-Stir-Fry with Salami, Onion, Coconut Flakes and Sunflower Seeds

In case anyone is interested in this creation, here is the "Recipe" (if you can call it that).

1. Cut up Broccoli, Onion and Salami

2. Use butter or coconut oil to fry onions and salami.

3. Add Broccoli and after a few minutes sun flower seeds and coconut flakes.

4. Season with Salt and Pepper.

5. Serve as is or as a side to some kind of meat.
